Station brownie

This spiced fruit loaf is easy to make and stores well. You can double the recipe to make two loaves and freeze one, so you have it ready whenever you like.

Cook time: 1 hour 10 minutes

Ingredients:
Wet ingredients
- 1 cup granulated white sugar
- 1 cup boiling water
- 50 g butter
- 200 g sultanas
Dry ingredients
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp mixed spice
- 1/2 tsp ground cloves
- 1/2 tsp vanilla essence
Instructions:
Simmer wet ingredients gently for 5 minutes, then leave to cool.
Grease a loaf tin, and preheat oven to 170°C.
Sift together dry ingredients, and mix with cooled wet ingredients plus vanilla essence.
Put into greased loaf tin and bake at 170°C for about 1 hour 10 minutes.
Leave to cool, then eat a slice with butter.
