Orange muffins

These orange and sultana muffins are light and tasty.

Ingredients:
Wet ingredients
- 1 large orange
- 1 egg
- 1/2 cup milk
- 60 g butter
Dry ingredients
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup granulated white sugar
- 1/2 cup sultanas
Instructions:
Grease muffin pan, and preheat oven to 200°C.
Cut orange into quarters, remove and discard seeds, cut each quarter into four pieces. Put chopped orange (with skin and flesh) into food processor. Process until finely chopped. Add egg, milk, butter; process until combined.
Put dry ingredients except sultanas in large mixing bowl, mix well, tip orange mixture into this. Sprinkle sultanas over; fold carefully without overmixing (stop as soon as all damp, but not smooth).
Spoon into greased muffin tins, and bake for 12–20 minutes at 200°C, until tops are golden brown and centres spring back when gently pressed.
