Apricot balls
By Andrew Walbran
I always make these apricot balls for Christmas. They keep well in the fridge for several weeks to have on hand to offer to guests.
Prep Time: 30 minutes
Yield: 28 balls
Tags: balls, apricot
Cuisine: NZ
Ingredients:
- 500 g dried apricots
- 200 g sweetened condensed milk
- 1/2 cup dessicated coconut
- 1/4 cup brown sugar
- zest of 1 orange
- more dessicated coconut for rolling
Instructions:
Chop apricots finely, and mix well with the other ingredients except for the last coconut.
Put more coconut in a bowl. Shape apricot mixture into balls, roll them in the coconut to coat them, and then put them on a tray.
Refrigerate the balls overnight on the tray, then move them to an airtight container and keep in the fridge until ready to eat.
